03 - In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, approximately 2 to 3 minutes.
04 - Beat in egg, vanilla extract, and almond extract until well combined.
05 - Add green gel food coloring and blend thoroughly until desired shade of green is achieved.

09 - Bake for 9 to 11 minutes until edges are set but centers remain soft. Cool completely on a wire rack.
10 - In a medium bowl, beat softened butter until creamy. Add sifted powdered sugar, milk, vanilla extract, and salt. Beat until smooth and fluffy.
11 - Spread or pipe a generous layer of frosting onto the flat side of half the cooled cookies. Top with remaining cookies to form sandwiches. Roll sides in additional sparkling sugar if desired.

# Expert tips:

01 -
  • They stay impossibly soft inside while the sparkly coating gives you that satisfying crunch that feels like celebration in your mouth.
  • The vanilla frosting tastes like real butter, not that artificial sweetness you get from box mixes, so even just one feels luxurious.
  • You can make them in under an hour, which means you can actually pull off homemade cookies on a busy weeknight.
02 -
  • Gel food coloring is absolutely non-negotiable here—I learned the hard way that liquid coloring thins your dough and makes it spread too much, turning your cookies into thin green wafers instead of thick tender rounds.
  • Don't overbake these cookies, even if you're nervous they're not done—they firm up as they cool, and slightly underbaked cookies are infinitely better than cookies that are dry and hard.
03 -
  • If you don't have an offset spatula for piping frosting, a small spoon or even an ice cream scoop works perfectly fine—it doesn't have to be perfect to taste amazing.
  • Make sure your butter is actually soft before you start—cold or room-temperature butter won't cream properly, and you'll end up with dense cookies instead of tender ones.
